Kashmiri Shufta Kashmiri Shufta is a traditional dessert made on special occasions. It is a mixture of various dry fruits, dates, raisins, paneer coated in sugar syrup made in ghee with a blend of spices. It tastes as much delicious as it looks. Prep time – 40 min Cook time – 25 min Total time – 1 hour 5 min Servings – 2 Calorie – 824 k cal. Ingredients - 50 gm almond 50 gm cashews 50 gm walnuts 25 gm pistachios 25 gm raisins 10 dried dates ½ cup grated coconut 50 gm paneer/ cottage cheese 50 gm ghee 2 cup sugar 1 tsp black pepper powder 1 tsp cinnamon powder 1 tsp green cardamom powder 1 tsp dry ginger powder A pinch of saffron 1 tbsp rose petals. Method – To make shufta , take a bowl and add cashews, almonds, walnuts, pistachios and raisins and soak it in water for 30 min . In another bowl add the dates and soak it in water for the same time period. Now, after 30 min drain the water from both bowls and chop all the nuts into smaller pieces. Take out the dates from the bowl and cut it nicely, remove the seeds from dates. Take a heavy bottom pan and put 2-3 tsp ghee in it After the ghee heated add grated coconut and roast it till it changes to light brown. Take it out on a plate. Add the remaining ghee in the pan and drop the paneer cubes , fry until it turns to golden brown color. Add the nuts, dates and grated coconut in the pan and mix well with the paneer. Add sugar and saffron in the pan and let it dissolves completely. Stir continuously to prevent it from burning. Serve it hot on a plate and garnish with rose petals.
