Kesar Phirni It is a traditional dessert of Kashmiri cuisine. It is made during festivals. Kesar Phirni is a delicious rice pudding made of milk. It is actually a type of kheer served chilled in earthen pots. So, enjoy the delicious dessert, Kesar phirni at your home in dinner. Prep time – 30 min Cook time – 45 min Total time – 1 hour 15 min Serving – 4 Nutritional facts – 221 kilo calorie Ingredients – 50gm of Basmati rice 1 litre full fat milk 4-5 strands of saffron 4 green cardamom pods powdered finely 10 pistachios chopped in slices 10 almonds chopped in slices 1 cup sugar. Method – For making Kesar phirni, first wash the rice thoroughly under water and soak it in water for around 30 minutes. After 30 minutes drain the water from rice and let it get dry. Now grind the rice coarsely. Soak the saffron strands in 1 tsp of lukewarm water. Heat milk in a thick bottom headed pan. Add cardamom powder and stir the milk and let it get boil for 15-20 minutes. Once the milk becomes thick in consistency add the ground rice, 1 cup sugar , kesar dissolved in milk and give it a stir. Now cook it for 15-20 minutes more on a low flame. Do not cover the lid and stir occasionally. As the milk gets thicker take it off the heat and allow cooling. Pour it into earthen pots and garnish with almonds and pistachio. Refrigerate for few hours and serve chilled.
